Sweet Potato Dry Fry (Sweet Potato Sabji, Madhurakizhangu Upperi)
Ingredients:
Sweet Potato - 1 medium
Onion - 1 medium (cut into thin long pieces)
Sambar Powder - 1/2 tsp
Turmeric - 1/2 tsp
Red chilli - 1/4 tsp (as needed)
Mustard - 1/4 tsp
Curry Leaves - 2 sprigs
Salt - as needed
Oil - 2 tsp
Method:
1. Cut the sweet potato into small pieces, as you would a potato. Cook them on the stove by adding water to a vessel or in
the Pressure cooker. Add salt while cooking.
2. Pour oil in a kadai, and add mustard to it.
3. Once it splutters, add curry leaves, and Onion, and fry for some time. Add a pinch of salt, and the Sambar powder, and mix well.
4. Once the Onion is golden brown, add the cooked sweet potato, and mix all the ingredients well.
5. Check the spice, and add chilli powder, if needed. Sambar powders will usually have chilli in it, and hence be mindful
about the spice level if you add extra chilli powder.
6. Allow it to cook and the masala to get blended well with the sweet potato.
7. Once it is mixed well, switch off the stove.
8. Sweet Potato Sabji is ready. It goes well with Chapathi, Roti or Rice.
