Buckwheat Dosa Indian recipe (Buckwheat Crepe Indian Recipe, Buckwheat pancake Indian Recipe)
Buckwheat is another fruit seed (like the jackfruit seed) and is mostly recommended for people who are allergic to gluten. Due to its low GI qualities, it is also recommended for people with Diabetes. Here is a dosa recipe with Buckwheat flour.
Ingredients:
Buckwheat flour - 1 cup
Rice Flour - 1/2 cup
Salt - as needed
Water - 1 cup
Cilantro leaves (Coriander) - 2-3 sprigs (Chopped finely)
Cummin - 1/2 tbsp
Oil -
Preparation Method:
1. Mix the Buckwheat flour and rice flour together.
2. Add 1 cup water, and mix both flours very well.
3. Once they are mixed very well, without any lumps, add the cummin, coriander leaves and salt, and mix well. The batter should be of watery consistency to get nice and crispy Dosas. If you like thick ones, just reduce the quantity of water.
4. Heat a tawa and sprinkle oil on it, I used sesame oil. You can use any oil you have.
5. Now pour the batter on the heated tawa, and spread it out as fast as you can. Due to its gelatinuos behaviour, buckwheat easily gets cooked, and hence it will be difficult to spread it out, if it is already cooked.
6. Allow the Dosa to cook and be crispy on one side first before flipping the sides.
7. Once it is nice and crispy, take it out.
8. Buckwheat Dosa is ready. It can be served hot with
Mint-Coriander chutney
or any curries, like
Chicken
or Fish or
Egg
