Mixed Vegetable Curry Indian Recipe
Ingredients:
Green Peas - 1 cup
Beans - 1/2 cup
Carror - 1/2 cup (cubed)
Potato - 1/2 cup (cubed)
Turmeric - 1/4 tsp
Chilli powder - 1/2 tsp
Onion - 1 large (Chopped)
Tomato - 2 medium (chopped)
Fennel Powder - 1 tsp
Bay Leaf - 2
To grind:
Green Chilli - 4
Ginger - 1 inch
Curry Leaves - 2 sprigs
Coriander - small bunch
Coconut - 1/4 cup grated
Khus Khus - 1 tsp (soaked in 1/4 cup water for 30 minutes)
To pound:
Cloves - 2
Cinnamon - 1 inch
Cardamom - 2
Preparation Method:
1. Cook the vegetables in the pressure cooker for 2 whistles with Salt, and keep them aside. Add 1/4 cup water for cooking in the cooker.
2. Pound the items mentioned in the 'To pound' section, and make a fine powder.
3. Add the 'To grind' ingredients to a mixer, and add a tbsp of water. Grind them to form a fine paste.
4. Heat oil in a tawa, and add the bay leaves to it.
5. Once they start leaving the aroma, add the onion, and fry them till they become soft.
6. Add tomatoes, and allow them to cook for 2 mins and turn mushy.
7. Add the fennel powder, the pounded powder prepared in step 2 and turmeric and mix well. Cook for 2 minutes.
8. Now add the ground paste, the cooked vegetables and mix them well.
9. Add chilli powder, turmeric powder, salt and cook the curry for 5 minutes.
10. Turn off when the consistency forms a thick gravy.
11. Mixed Vegetable curry is ready now. It can be had with Dosa, Idli, Chapathis or Pathiri (a Kerala rice pancake).
