    Traditional cooking and curries have their own grace and elegance. If you notice, most of the traditional curries are made in a particular way, so as to retain the healthiness in them. This time, it is a traditional country-style dish that I am going to share with you. As the name suggests, it is Chicken Curry made with roasted coconut. This is made mostly in the Northern part of Kerala, popularly known as Malabar. The chicken is cooking in the ground roasted coconut, and is a very tasty dish. As always, I have managed to use the healthier ingredients wherever possible. Please try it at home, and hope you enjoy it :)
    Chicken - 1 Kg (Buy free-range Chicken, as they are more healthier to caged chicken, as they feed on natural food)
    Turmeric - 1/4 tsp
    Red Chilli Powder - 1/2 tsp
    Lemon juice - 1 tbsp
    Salt - to taste
    Dry Roasting:
    Coconut - 1.5 cups (fresh or frozen)
    Garlic - 3 cloves
    Shallots - 5-6 (small onion)
    Dry Red Chilli -2
    Coriander - 1 tsp
    Fennel seeds - 1/2 tsp
    Onion - 1 cup finely chopped
    Green Chilli - 3
    Curry Leaves - 3 sprigs
    Oil - as required (Virgin Coconut oil is the best)
    water - 1/2 cup
    Cinnamon - 1' stick
    Preparation Method:
    1. Cut the chicken into medium size pieces. Marinate the chicken with the ingredients mentioned in the Marination section, and keep it aside for 30 minutes.
    2. Heat a kadai and add red Chilli, Coriander seeds, fennel seeds,and roast them.
    2. Once they are roasted and aroma starts coming, add coconut. Roast the coconut untill they start changing colour to dark brown. Now it is ready to put garlic and shallots into it.
    3. Allow the mixture to cool, and once cooled down, grind it to a very fine paste.
    4. Heat 1 tbsp oil in a kadai. Once the oil is heated, add the cinnamon stick to it, and leave it there till the aroma starts to set in.
    5. Add the red chilli powder, turmeric, chopped Onion, green chilli and curry leaves and fry it for some time. Add a little salt to the items, to get the onions fried quickly.
    6.Once the onions are fried, add the ground paste to it. Add the marinated chicken and water now, and allow it to boil. Once boiled, leave the curry there on simmer to allow the chicken to cook properly.
    6. After 5 minutes, take it off the stove. Yummy chicken curry, is ready ! You can eat it with rice or chapathis.
